Fall is my favorite season – obviously. 🍁🎃😉

It has been a beautiful fall but there is something about the season that makes me a bit melancholic. I want to stay home and get cosy.

The first thing I love is this short music playlist. These are like some emotional support songs!  I love great lyrics, a folksy/pop vibe and … melancholy.

The second thing I love is this oversized denim jacket I just bought. I got it in a large so I can wear a hoodie under it.

The third thing I love this month is this delicious black bean soup. The secret is caramelized onions! Thanks to Vishali Varga for this recipe. 

Black Bean Soup

Ingredients

Olive oil – 4 tablespoons

Onions – 2 large chopped

Garlic – 4 cloves minced

Cajun spice – 4 teaspoons 

Celery – 4 stalks chopped

Bay leaf – 3

Black Beans – 2 cans

Salt – 1 teaspoon or to taste

Sherry – 1/4 cup

Lemon juice – 1 lemon

Cilantro, sour cream or yogurt

Method-

Carmelize onions in oil. Add garlic, celery and spices and cook 3 minutes. Add beans, salt, 2 cups of water and sherry. Let simmer for 15 minutes. Add lemon juice. Blend to desired consistency. Garnish with cilantro and yogurt or sour cream.
